Wearing a chefs hat

When I first became vegan, I opted for making easy dishes... You know, the sort of thing I was used to making but veganizing them by swapping meat for tofu, margarine or butter for soya margarine, cows milk for rice milk etc etc.
I remember reading my first vegan recipe and thinking it would cost the earth to get all of the ingredients... This was compounded when I read a few of Scott Jureks' recipes as I looked down the extensive list of required items.

Things have progressed since then. I find I buy stuff for one recipe, then add a few more cupboard items for another recipe, and before you know it I have all the ingredients for so many dishes. Today, after thinking about what I could take to work tomorrow, I suddenly thought about one of my favourite things at the moment... Marks and Spencers nutty grain salad! I could eat it all day everyday, and it suddenly dawned on me I have every ingredient in my kitchen to make one myself. So, I set to work and within 20 minutes had knocked up something so tasty, it's killing me not to eat it all now.

It just goes to show you can make anything when you try. It's packed full of super foods too, so I shall hopefully be all fired up for training on the way home from work tomorrow evening. :-)
